Authentic Fajitas recipes, Please!? Dose any one have a really good authentic Fajitas recipes, for beef and chicken?? I want to have a little cinco demayo party and I want to make fajitas. If any one has a good recipe, let me know please. (Also if you have any other authentic mexican food recipes, please post them :) ) |
This is from Cook's Illustrated.... Chicken Fajitas ! lb. boneless skinless chicken breasts, sliced into 1/2 in slices S&P 2 tbsp. veg oil 2 tbsp. lime juice 2 red bell peppers, sliced thin 1 red onion, sliced thin 1 tsp. chili powder 1/2 tsp. cumin 2-4 tsp. water 1 tsp. Tabasco Heat 1 tbsp. oil in skillet over med. high heat, S & P the chicken, add the chicken to pan. cook through. Transfer to bowl toss w/ lime. Add the remaining oil to pan, cook peppers, onion, chili powder, cumin, 1/2 tsp. salt, 2 tbsp. water. Cook til softened, about 5 min. over med. high heat. Add remaining water if sticking. Return chicken to pan & any juices. Stir in Tabasco & season w/ S & P. Transfer to a bowl. Serve w/ warmed shells, salsa, sour cream, chopped avocado, shredded cheese, shredded lettuce, Serves 4 Diana Kennedy has many authentic Mexican cookbooks out, she gets great reviews for good recipes. |
OK, I know this is not authentic, except to me but this is what I do and everyone seems to like them. I sprinkle the meat with season salt and marinade in worchestshire sauce. Then grill meat. In the meantime I saute onions and peppers and serve with guacumole, sour cream, salsa, etc. My hubby like to sprinkle with fajita seasoning but still uses the worchestshire as marinade. Quick and easy:) |
Hello, my name is Laura and I am Mexican-American. And well as you may suspect, all my recipes are authentic mexican. I would flood the thread with recipes. Let me know what you are interested in and I would be happy to give you a few. Authentic fajitas are cooked on a grill. The cut of meat you want to buy is called "Arrachera" or "Fajita Flecha" . Basically fajita is skirt steak. Ask for the butcher to put it through the tenderizing machine so that you will not have to do it yourself. I season them with lime, fajita seasoning mix, and a small amount of pepper. This cut is thin so they don't take too long. Put it on the grill and just cook to your liking. Some people like them a little rare, others like it well done but not crispy. Always cut the fajitas against the grain. Strips or diced however you like them. They are ready to eat that way, but I like to do a little something extra. After you cut them you can put them on a covered slow cooker or even just a regular Stover top roaster and put in a the low setting. This will make them extra extra tender. I do this for about 15 minutes or so. Serve them in Corn or Flour tortillas or just in a plate . I have other recipes that would be great with fajitas. Let me know if you want some. IM me. |
Thanks every one! Keep them coming! We don't have fajita seasoning mix here. The store on post dose not carry it and yeah off post dose not either...scent we are in germany... it's not the best place to try to find mexican food or seasoning mix for it |
This is really classified as Tex- Mex but it always goes first when I take it to gatherings....... Tex- Mex Dip 1/2 c. Hellman's mayo. ( can be low fat) 1c. sour cream ( can be low fat) 1 pkg. taco seasoning mix Use 3/4 of the seasoning packet & mix in mayo. & Hellman's, set aside. 2 cans refried beans Use the other 1/4 packet in the beans, spread beans in a 8x11 in casserole dish. Spread the mayo. mix on top of beans. 16oz. sharp cheddar cheese 3 tomatoes, chopped 1-2c. black olives, sliced thin scallions, sliced thin Put toppings on in this order.Serve w/ tortilla chips or Fritos. Can be made the day before or in the morning. |
