Since I have been getting a lot of questions about what I eat, and what exactly "RAW" food is all about,I have decided to start a thread to show you all what I have been eating! Raw food is not all carrot sticks and apples. Its not tree bark and sprouts or lettuce and celery, in fact its a wonderful way of eating that opens up you up to flavors you've never before tasted! And I say never tasted because your palate is so cleansed that for the first time you are really tasting the real flavor of your foods, and your eating foods that are not processed to the point that their real flavors are altered beyond recognition! I take pictures of my meals as I eat them, mostly lunches and dinners as those are the meals I really spend time on preparing! Breakfast is usually something quick like fruit and water or a smoothie! But the other meals are when I get to be an artist! You'll see! I'll include a recipe when I show you a more complicated meal, just so you can get an idea of what all goes into a raw meal... Its really very interesting! So I have three days to start with... Here we go! Day one... Avocado, Alfalfa Sprout, and Berry salad! mmmmm with cracked pepper and sea salt! |

3 Attachment(s) And last night..... This was a seriously good dinner... And Jen will totally feel me on this one!!!! I had Raw Chicken Salad ;) "Mock Chicken" In a bed of sprouts, alfalfa and onion, with avocado, strawberry tomatoes, orange bell peppers, sweet pea greens, and a raw dressing made from olive oil, ginger, garlic, sesame seed dressing on top!!! It was totally amazing!!! Heres how to make Mock Chicken Salad! For the salad: 3 cups raw soaked* sun flower seeds, ground in food processor (to pieces about 1/4 the size of the seed, not to paste but chopped up pretty good) 3 to 4 stalks celery sticks diced 1/2 bunch of scallions diced 2 tbsp dried time 2 tbsp dried oregano 2 tbsp dried sage For the dressing: (or mayo like stuff to mix into the salad...) 3/4 cup Thai coconut water 3 med cloves of garlic 1/4 cup lemon juice 1/2 tbls sea salt 1 1/4 cups of macadamia nuts, cashews, pine nuts, or a combination (I usually use cashews cause they're less expensive if you buy the cashew pieces from the bulk bins) you don't have to use them all you can pick just one!;) 1/4 cup stone ground mustard Ok! Now... in a large mixing bowl, combine all of the salad ingredients and blend thoroughly. In a high speed blender, combine all of the dressing ingredients and blend thoroughly. Pour the dressing a little at a time so its not too wet, this makes a lot of dressing! Mix well and serve! You'll be amazed at what a few spices can do!!!! It tastes amazing! *Soaking sunflower seeds! Soak the sunflower seeds in pure water for 2 to 4 hours drain and dry. I don't mean dry hard like a rock... I mean drain and dry off all the excess water.. I line a bowl with a kitchen towel doubled in two and pour the seeds in and the towel soaks up all the water... ;) Why soak?? It wakes up the seeds and causes them to release a enzyme inhibitor which prevents your body from digesting the seed! so it is now edible! Plus it makes the texture perfect for the salad!!! :animal36 |

That Chicken Salad makes enough to feed two people for a few meals! You'd be amazed at how filling it is... one of those scoops is plenty! I could not finish my second scoop, it was just too much food! And thats only 1/2 an avacado on my plate! I used a shallow bowl to serve it in. |
mmm actually that all looks good, unfortunately I would never get my kids to eat it. We did the south beach and I ended up spending like $400 in one month just buying food. I just can't always do that. |
I just printed this thread!! I eat nothing but raw foods (not meats!!). These look so good! I just showed my bf and he knows how crazy I am for raw foods and he's going to try his hardest to whip it up for me! I have a whole library of raw food recipie books and have attended a few workshops with some raw food chefs. I am an aspiring raw food chef myself! I'd say I'm pretty dangerous in the kitchen! I am a mean prep! I can't say cook! lol All we do is prep! :p I'll post recipies for everything I make so you can print them out, and I'll reccomend a few books.... Matt Amsdens book, Ravolution... I spent a day with him.. wow! I learned sooo much! He is amazing! His book is worth every penny!
