Please share your favorit recipe I thought it would be interesting to share a favorite recipe anyone got a good one?? Here is one os mine: cucumbers, tomatoes, feta with endive (Easy Salad) 10 cherry tomatoes, quartered 1/3 cucumber, quartered lengthwise and sliced 1-2 ounces of Feta cheese, crumbled 4 generous tablespoons good olive oil herbs de provence (or thyme or whatever herb you like) sea salt & fresh ground pepper 1 head endive (optional) 1. combine all ingredients well in bowl. 2. pour glass of wine. 3. rip off hunk of bread. (for the left over olive oil) 4. eat. 5. drink. 6. mop. 7. smile. |
This sounds like something I make in the summer, but I don't care for cucumbers, so I use black olives. Sometimes I use Havarti cheese also. Your right it is good :) |

BEST Chocolate Cake EVER! :D In a large bowl mix 2 cups sugar and 2 cups flour. In a saucepan mix 2 sticks of butter, 1 cup of water, and 5 tablespoons of cocoa. Heat the cocoa mix till all blended. Pour over dry ingredients. Add 1/2 cup buttermilk, 1 tsp. baking soda, 2 eggs, 1/4 tsp. salt, and 1 tsp. vanilla. Mix. The batter will be wet and not stiff. Pur into greased and floured sheet pan and bake at 350 for 25-30 min (till toothpick inserted into middle of the cake comes out clean) Frosting In a saucepan mix 1 stick butter, 5 Tablespoons of cocoa, and 6 Tablespoons of milk. Heat adn stir until blended. Add 1 package of powdered sugar 1/2 tsp. vanilla, and 1/2 cups of nuts (nuts optional). Blend together and pour over hot cake. I poke holes in the cake with a toothpick so that some of the frosting runs down into the cake. Mmmmmmmm good!!! I hope others contribute to this thread! |
Mmmm, chocolate cake- yum! My daughter loves to bake and I see a cake in my future.;) I just tried this recipe last night and it is fabulous! I thought the dressing might be too sweet but the flavors all work together perfectly. It is definitely my new favorite salad and only has 60 calories for a 1 1/3 cup serving so you can pig out! Yummy Spinach Salad 2 T fresh orange juice 2 T fresh lime juice 2 t dijon mustard 2 t honey salt and pepper 1/2 cup thinly sliced red onoin (I left this out) 8 cups baby spinach (about 8 oz) 1 apple very thinly sliced (I used granny smith) 1/4 blue cheese Wisk OJ through salt and pepper. Combine salad and toss with the dressing. |
Here is another one... ButterMilk Pie (Its MM MM GOOD!!) 3 eggs 1/2 cup butter, softened 1 1/2 cups white sugar 3 tablespoons all-purpose flour 1 cup buttermilk 1 teaspoon vanilla extract 1 tablespoon lemon juice 1/8 tablespoon freshly grated nutmeg 1 (9 inch) unbaked pie crust DIRECTIONS Preheat oven to 350 degrees (175 degrees C). Beat eggs until frothy; add butter, sugar and flour. Beat until smooth. Stir in buttermilk, vanilla, lemon juice and nutmeg; pour into pie shell. Bake for 40 to 60 minutes, or until center is firm. Then put it in the icebox and let it get nice and cold. Its REALLY good with a nice glass of ice cold milk. |

Potato Salad Boil and cube 5 lbs potatoes Add: 1/2 red onion diced 2 stalks celery chopped 2T sweet relish Dressing: 1/2 jar mayo 3 T sugar salt & pepper to taste Mix in enough apple cider vinegar to make thin You may want to add more or less sugar and/or vinegar. I just keep tasting. I don't do alot of measuring. Pour over potatoes and let set overnight. (I also like to use this dressing for cole slaw) |

Here's a variation of the buttermilk pie - for those of you in Texas or near a Luby's cafeteria, you can try this pie there. It is very very good. The recipe is from the Luby's cookbook Buttermilk Pecan Pie 1 cup sugar 1/3 cup flour 1/8 tsp salt 2/3 cup butter, melted 1 1/3 cup buttermilk 1/2 tsp vanilla 1/2 cup pecan pieces 1/2 cup raisins 1/4 cup coconut unbaked pie shell In a large bowl combine sugar, flour, and salt. Whisk in melted butter, buttermilk and vanilla. In a small bowl, toss together pecan pieces, raisins, and coconut. Spread pecan mix into bottom of pie shell, then pour in buttermild mix. Bake at 350 for one hour and 20 min, or until pie is set in center and golden borwn. Refridgerate. |
Spinach Artichoke Dip 1 block cream cheese 1 cup mayo 1 container sour cream 1 pkg of golden onion soup 2 small (or 1 big) can (drained) artichokes garlic, salt, pepper to taste 1/2 (or if you want more you can add more) frozen spinach thawed...squeeze as much of the water out as you can 1 pkg of montery jack or swiss cheese (I like to mix the cheeses) bake at 350 for about 30 minutes or until lightly browned,... Serve with assorted crackers. DEEEEEELICIOUS!! |
BBQ Chicken Burritos Here is one that is fast and easy.......and it tastes good too!!! BBQ Chicken Burritos 6 Chicken Breasts with or without bone (or a whole cut up chicken depends on what type of meat that you like)...the boneless chicken breast or strips are the easiest to work with. Bull's-Eye BBQ Sauce (I use the honey or original flavor) A bag of shredded mild cheddar cheese 10 pack of flat burritos Sour cream Boil the chicken in water for about 30 minutes or until done. Flake the meat into a pot and add BBQ sauce (add enough to make the mixture moist). Heat for about 10 minutes or until the mixture is hot. Spoon the mixture (about two to three tablespoons each and you can adjust as you go) into the middle of the burritos and then sprinkle with the cheddar cheese. Roll these up and place in a pan seam side down. Put these into the over for about 5-8 minutes at 325 degrees in order to melt the cheese. Serve with sour cream........my kids hate the sour cream so they eat theirs plain.........:D |

You know - I just started seeing it for the first time too, a few weeks ago. BUT, it is in their new book, "Luby's Recipes and Memories." It is described as a collection of our favorite dishes and heartwarming stories. The pie has to have been around for some time to be included in the book - it's a 60-year celebration for Luby's 1947-2007 - not that the pie has been around for 60 years, but you know what I mean....... :rolleyes: Anyway, it tastes GREAT!!! |
Salad!! This is my new absolute favorite. It is so good and so easy! I dont have a name for it, i made it up myself! Pre-washed bag of romaine lettuce... put as much as you want in a bowl cut some grapes in half then i get a bag of different kinds of nuts and raisins that are sweetened (its called sweet harvest) then mix it with rasberry vinagrette dressing. I promise its great, and it fills me up. I actually just had it for dinner |

Baked Potato Soup 1/4 cup (1/2 stick) butter or margarine 1/4 cup chopped onion 1/4 cup all-purpose flour 1 can (14.5 fl. oz.) chicken broth 1 can (12 fl. oz.) NESTL? CARNATION? Evaporated Milk 2 large or 3 medium baking potatoes, baked or microwaved Cooked and crumbled bacon (optional) Shredded cheddar cheese (optional) Sliced green onions (optional) Directions: MELT butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from 1 potato (reserve potato skin); mash. Add pulp to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes just to a boil. Dice remaining potato skin and potato(es); add to soup. Heat through. Season with salt and ground black pepper. Top each serving with bacon, cheese and green onions, if desired. VARIATION: For a different twist to this recipe, omit the bacon, cheddar cheese and green onions. Cook 2 tablespoons shredded carrot with the onion and add 1/4 teaspoon dried dill to the soup when adding the broth. Proceed as above. |

Sweet Chicken Bacon Wraps Recipe courtesy Paula Deen 1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts) 1 (1-pound) package sliced bacon 2/3 cup firmly packed brown sugar 2 tablespoons chili powder Preheat oven to 350 degrees F. Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp. |
