My only suggestion that has not been brought up is to use evaporated skim milk instead of whole milk or heavy cream. You will get the rich texture of heavy cream with 1/2 the calories. I also say, "Don't over do it on the spices. Just a hint is good." |

I decided to bake fresh sweet potatoes since I have the time. They cooked up really, really tender and moist, but leaked juices everywhere so now I definitely have to clean the oven - good thing I'm done with my holiday cooking and will remember next time to put a throw away pan to catch the drippings. After reading all about them I discovered how healthy they are (without all the sugar and additives of course). Anyway, I decided to try one drenched in butter (can't be too healthy) with salt and pepper. I was surprised the taste was very similar to a regular white potatoe only a lot creamier in texture. I will be eating a lot more of these and will definitely be making them for my granddaughter when she begins eating foods. I will try the finished product with all the sweet added, just in case I might like it. I'm worse than a kid when trying something new - I say I don't like something, but the truth is I've never even tasted it! As soon as my husband gets home he is going to taste a sweet potato with his eyes closed (he says he doesn't like them either)! |
The BEST sweet potato recipie is on the back of the Sugary Sam's sweet potato can. I can't recall the measurements, but it includes brown sugar, butter, coconut and chopped pecans - it may have melted marshmallows on top, but I don't think so, can't remember. My family adores it and NONE of us like sweet potatos, except for this recipie. |
