Christmas Cookies continued...Lemon Cookies? This is the last chance to post your favorite cookie recipes! On the old thread, someone asked for a Lemon Cookie recipe, and no one responded. If you have any other traditional, family, or friend Christmas Cookie recipe you would like to share, please do! If you want to share the story of the recipe, I'd like to hear that too. Please post your recipes today as I intend to do the grocery list and shop first thing in the morning for my ingredients. I appreciate all the postings to my original request very much, and am sure my friends and family will too! I have put all the current cookie recipe submissions in a word document. The norwegian bon bons that I posted earlier on the cookie thread are not lemon, but the frosting has lemon juice in it...if that helps. They are to die for! I just ate a couple a while ago. LOL A few more recipes... Cinnamon Cookies 2 c. butter 1 c. brown sugar, firmly packed 4 1/2 c. flour Cream butter & brown sugar until fluffy. Add flour & mix well. Form small balls and press with fork. Place on ungreased cookie sheet, bake at 350 for 10-12 minutes. Let cool about 1 minute, then roll in mixture of 3/4 c. sugar and 1 1/4 tsp. cinnamon ---------------------------------------------------------------- Russian Tea Cakes 2 c. soft butter 1 c. powdered sugar 2 tsp. vanilla 4 1/2 cups flour 1/2 tsp. salt 3/4 cup finely chopped walnuts Mix thoroughly the butter, pwd sugar and vanilla. Add flour with salt, then add nuts. Roll into balls and place on ungreased cookie sheet. Bake at 400, 10-12 minutes, until set, but not brown. While still warm, roll in pwd sugar. Cool and roll in pwd sugar again. ---------------------------------------------------------------- Strawberry Cookies (These add color to your holiday cookie plates) 1 can Eagle Brand Milk 2 1/2 pkgs. stawberry jello 1 pound coconut flake Mix together and let stand in refrigerator about 30 minutes. Shape into strawberries. Roll in left over jello. Make green icing and add leaves with decorating tube. Place a colored green sliced almond in the top for stem. Will keep in fridge for a long time. ---------------------------------------------------------------- Divinity 3 cups sugar 1 cup white karo syrup 1/2 cup water 2 egg whites beaten stiff with 1 tsp. cream of tartar Boil sugar, syrup and water until it thread (almost to the soft ball stage). Pour 1/2 mixture into egg whites and beat at low speed while the other 1/2 of syrup boils to a hard ball. Pour into the first half of egg whites and beat until firm (10-15 min). Add 1 tsp. vanilla and 2 cups walnuts. Stir...let mixture stand and stir occasionally, until it holds it's shape. Put into 9X13 pan or drop by heaping teaspoon on buttered wax paper. |
