I Need Recipe Help!!! I need some help finding a recipe and I am hoping someone on YT may be have the answer. My neighbor makes the BEST summer salad with tomatoes, cucumbers, red onion and feta cheese and uses a oil and vinegar type dressing. Well I tried making it last night from a recipe I found on Google and it just did not taste right- I ended up throwing it out after our meal. Does anyone have a good recipe? I think I went wrong with the dressing which called for oil and red wine vinegar but nothing else. I could call my neighbor but she is on a much needed vacation in Destin Florida and I would hate disturb her. I am babysitting her elderly Min Pin (who is also blind) and I know seeing my number show up on her caller ID would stress her out. |

If you're using a good quality olive oil, my guess it's the red wine vinegar, either the ratio used or the brand of vinegar. I've tried several and they do differ in taste. I would probably try the second recipe Karen posted, with the lemon juice, it sounds good. Try mixing a little of just the dressing, and tasting it before using it all over the salad. |

Karen, this looks like a good recipe. You need to start with a good quality RWV and add more salt and pepper than you might think is needed. Also taste all along the way. The addition of fresh herbs, such as mint and parsley will also help to bring out the flavors. Did you use red onion? That would be my choice. Use the absolute best tomatoes you can find. Heirloom, Campari, on the vine ~ whatever is the most flavorful you can possibly find. When you are using only a few ingredients THEY MUST SHINE :D:D |

Thank you all for the suggestions and recipe(s). No I didn't use Red Onion but I think that will help along with seasoning the oil and vinager. I am think also of using Basalmic next time, I think it something I need to play around with. I am so disappointed, you know who you set your mind on eating something good and being let down. |
