I need lunch ideas please :) I got a new job last Friday and I have to pack a lunch- ugh i hate packing a lunch. And more than packing a lunch- i hate thinking about what i'm going to eat for lunch. I need some ideas. I do not eat lunch meat, the school is peanut free and i REALLY want it to be healthy- any ideas?? PLEASE! |
Cheese on rye or whole wheat with lettuce and tomato. Soup. |

Get a plastic air tight container and make up a salad the night before. You can even buy veggie chicken strips to add to the salad. I use these and they are really good. Morningstar Farms - Morningstar Farms Meal Starters Chik'n Strips They also have a sweet n sour chicken that you could put over rice. I'm not a big fan of real meat, but I do like Tofu and veggie meats. Maybe boil up a few eggs, take shells off and keep in the ref. to add to your salads. It's an excellent source of protein to keep you mentally allert. Same as cheese and Tofu. Feta is my favorite in a salad. |

Maybe you could make up a pasta salad and add some nice grated mozzerella, olive oil, grated carrots, spinach, boiled egg, ripe olives, peas or lightly steamed broccoli. Be creative. ;) I think lunch should be the larger meal of the day, then go light for dinner. |

Adding an idea (that I need to do myself too) My husband and I used to make macaroni salad all the time - he liked Tuna in it - I didn't (I perfer it meatless) but but you could sub chicken it kind of went like this and if you cook a big pot of it - it'll make several lunches (or dinners) The shell or twisty kind of macaroni - cook al dente Mayo - or miracle whip (or regular salad dressing) thawed frozen peas Shredded or sliced raw carrots onion if you like it Any other veggies that you like raw basil - tarragon or whatever spice you like to use with macaroni and what I always use is Celery POWDER for taste - or Celery salt (I perfer powder but it's hard to find) and let it sit overnight - it always tastes better the next day |

oh and something else very easy Melba Toast - put a layer of Swiss Cheese or Brie then after you heat - add Rasberry jam on top it's addicting (filling) and really really good provided you have a micro or toaster oven at work |

I always feel that I want a hot lunch when I am working. Something that makes you feel like you have eaten, something healthy that fills you up. What I usually do is slice up eggplant, zucchini, anise, sweet potato, mushrooms, onions,asparagus and just about anything that is vegie and lying around. Toss it in olive oil and fresh herbs like rosemary and time and minced garlic, and then place it on large cookie sheets and roast them off at about 425* for about a half hour. While that is cooking I make a combo of grains, like rice, barley, quinoa, wheat germ and cook that off. Then I make little containers, containing both the vegies and rice. That way you have about 3-4 lunches and or a dinner side dish. Plus you are getting a good dose of your vegies and grains for the day! |

-Tabouleh salad-(wheat salad) with tomatoes, cucumber, basil & feta. Yum! I'm having that this week! -How about a wrap with cheese, tuna or chicken or hummus & veggies inside it? -English muffin pizzas-spread them with spaghetti sauce, top w/cheese and your favorite pizza toppings and then you can nuke them or even better toast them in a toaster oven. -Pita bread filled with chicken salad (with grapes, cranberries, walnuts, apple chunks, celery, etc. and a little mayo & cinnamon) -Tomatoes, fresh sliced mozzerella, fresh basil leaves-just slice it all up and put it in a tupperware. Then bring a small jar or tupperware of olive oil & balsamic vinegar, or easier yet a vinagrette salad dressing. So yummy! |
What about a good ole fashioned Pimento Cheese sandwitch? I love mine on whole grain bread with jalapeño peppers. And don't forget FRUIT! |
Make a quiche over the weekend and then pack a slice for lunch Regarding salads - I'm never full or satisfied if the salad is primarily greens. Lately my salads are hearts of palm, fresh mozz, tomato, avocado, and one or two pieces of boston lettuce. Brianna's French Vinaigrette. Yum. |
Call me boring but I always bring the same lunches chicken and rice alternated with lean steak and sweet potatoes and cucumbers it's easy because I always know what I'm having. I also eat mostly plain stuff. If I eat pasta or bread, I get sluggish and that usually causes sugar urges that result in a 3:00 PM donut or candy run. I also don't do well with sodium or all the nitrates in processed stuff like cheese or soups (unless homemade soup) I also keep my blood sugar up with protein shakes. I try to eat 5-6 times per day although lately it's not been good with a sick dog at home. We are getting back on track though :) Congrats on your new job. |
I usually bring yogurt, bananas, apples and oranges for snacks. since your school is peanut free, try some cheese with the apples. A lot of time this might wind up being lunch. In warmer weather, I get the bags of salad and bring some cut up meat and have that for lunch--sometimes I may have a roll with it. Another way to have salad is to fix up your salad with you dressing and the wrap it up with a pita bread. It's filling and healthy at the same time. :) a lot of times I will just make a little extra for dinner and make up lunch from the leftovers. |
My sister is a teacher and she likes cheese and a tortilla (she melts it in the micro)adds an apple & she gets some carbs, fruit, protein and fat. |
I was going to mention tortilla something. Or, make a tortilla wrap with chicken in it or whatever you like. If you are in a rush, a hot pocket to microwave with some fruit makes a quick lunch. I liked the idea of making a quiche the day before and taking a slice. There are some easy, quick quice recipes that are very tasty! Good Luck with your new job! |
Congratulations on the new job!! I eat so much chicken I'm starting to get feathers but it can be healthy and versitale. I usually prepare meals for a few days so I don't eat junk. I grill chicken, bake a few potato's, grill or steam a bunch of veggies. Salads are only good if you make them harty and healthy with baby spinach, beans, little cheese-feta-goat-gorganzola, dried cranberry, nuts~ My favorite lunch is baby spinach, tuna, tomato, mushrooms and salted sunflowerseeds or romaine, grilled chicken, black beans, corn, cucumbers with a little feta. In the winter I usually add some whole grain pasta to my salads to fill you up~ good luck |

I like this on a hot day, it's so refreshing when well chilled.....I pack this in my DH lunch..... Grape Salad 2 lbs red and/or red seedless grapes 4 oz. sour cream 4 oz. cream cheese, softened ¼ c. sugar ½ tsp. vanilla, to taste ½ c. sweetened coconut ½ c. chopped walnuts Wash and stem grapes. Drain well and set aside. Beat cream cheese and sugar until fluffy, about 1-2 minutes. Gently beat in sour cream and vanilla, about 30 seconds. By hand, fold into grapes, use as little or as much as you like, add in the coconut, and walnuts until blended. Place in large serving bowl. Chill overnight. Note: Recipe can be easily doubled. Can use light cream cheese and sour cream. |
