Recipe Share! It is absolutely monsooning here in Baltimore this weekend. We are supposed to get 4 inches of rain by tomorrow.... Great time to cook! Do you have a favorite recipe? One that everyone always asks you for? Let's share :) Here's one of mine...for home-made coconut fried shrimp. Not being modest ;) this one's a winner Coconut-crusted Fried Shrimp Makes six servings Ingredients 24 uncooked, fresh jumbo shrimp, peeled, deveined, tails removed 1/3 cup corn starch 1/4 teaspoon salt ½ teaspoon cayenne pepper 2 cups sweetened shredded coconut 3 large egg whites Vegetable oil (for deep frying) Your favorite Mango Salsa Directions Using a small sharp knife, and starting at the top of inward curve just below tail, butterfly shrimp, cutting each more than halfway through toward outward curve. Do not cut shrimp in two. Open each shrimp, as you would a book, and press slightly to flatten. Mix corn starch, salt, cayenne in a medium bowl. Place coconut in a pie dish. Beat egg whites in another medium bowl until frothy. Dredge shrimp in cornstarch mixture, shake off excess. Dip shrimp in egg whites, then press shrimp in coconut. Turn shrimp over and press into coconut again to coat both sides. Pour enough oil into a heavy large pot, or wok to reach about 2 inches in depth. Heat until hot. Add shrimp to hot oil, deep fry until cooked through and golden brown. Using tongs or slotted spoon, remove from oil and transfer to paper towels to drain. Arrange shrimp on a platter and serve with your favorite mango salsa for dipping. |
Mmmm yummy, here's my recipe for Taco Pie... it's so tasty and simple to make, great for families, too! Ingredients: one container of Pillsbury crescent rolls one lb. ground beef one packet taco seasoning one small container of sour cream (8oz?) one 16oz package shredded mexican style or fiesta blend cheese one bag tortilla chips, crushed Directions: Heat the oven to 350 degrees. Unroll the crescent rolls flat on the counter. They will have a perferated cut right in the middle with four rolls on the top and four on the bottom. Don't separate the rolls, but separate at the perferated middle, and in a 8 or 9 inch baking dish, line the bottom of your dish with the first half of the crescent dough, then the second half right on top of the first. It sounds confusing, but consider it the first layer of your "pie!" Place in the oven and bake the same amount of time that's on the crescent roll package. While those are baking, brown the ground beef and add the taco seasoning. When your crescent dough is done, top with the seasoned ground beef, then add the sour cream, cheese, and crushed tortilla chips to the baking dish. Put back in the oven and bake for 15 minutes. Remove and enjoy, serve it like lasagna! |

Raspberry Tarts 1 cup of flour 2 tablespoons sugar & 1/3rd cup of sugar 1/2 cup butter or margarine cut into 1/2 inch chunks 1 1/2 cups of raspberries 1 1/2 tablespoons of cornstarch 2 tablespoons of powdered sugar 1. Combine 2 tablespoons sugar, 1 cup flour, and 1/2 cup of butter in a bowl. Rub with your fingers until mixture is crumbly. Press dough into small balls (I do 1/2 inch around) Put balls on tray and make an indent with your finger in the middle of the ball for the filling. 2. Bake crust at 350 degrees until golden brown (about 15-18 minutes) and then let cool 3. In a 1-2 quart pan mix 6 tablespoons of water, 1/3 cup sugar, and 1/2 cups raspberries bring to a boil over medium heat while stirring. *must stir do not let sit for long or will burn* 4. Blend the cornstarch (in separate bowl) with water then mix with raspberry mix in pan. stir until boiling. Then let cool, stirring occasionally. (May be covered and stored up to four hours, however I always put it directly into the crust it's easiest when its warm.) 5. Spread sauce on bottom of crust mound remaining berries on top sprinkle with powdered sugar and enjoy! |

Here is my mother's recipe for an oatmeal spice cake- very moist and yummy!! Oatmeal Cake Suzanne McOsker recipe Cake ingredients: 1 cup Quick Oats 1/2 cup Shortening 1 cup Brown Sugar 1 cup sugar 3/4 tsp ground Cinnamon 1/2 tsp ground Nutmeg 1/2 tsp ground Cloves 2 eggs 1 1/2 cup flour 1 tsp baking soda 1 tsp salt 1 tsp vanilla extract Broiler topping ingredients: 6 tablespoons margarine 5 tablespoon evaporated milk 3/4 cup Brown sugar 1/2 cup chopped pecans 1 1/4 shredded coconut Pour 1 1/4 cup boiling water over quick oats- let stand for 20 min cream together shortening and sugars. Add oatmeal, vanilla and eggs- mix well. mix together dry ingredients(flour, spices, baking soda and salt) mix well until blended. Pour batter into a greased 13x9 in baking dish and bake at 350 degrees for aprox 30-35 min(until toothpick inserted into the center comes out clean) prep the broiler topping shortly before baking of cake is complete. Once cake is done, remove cake and turn on broiler to high. Spread the broiler topping on the hot cake and replace in the oven. Watch closely and remove cake when topping is light brown and bubbly. Watch very closely-coconut will burn. |

My recipe for meatballs. Nothing special. Just super tasty. meatball mix 2lbs. ground beef, chuck, turkey, or chicken 1 package stove top stuffing. Flavor depends on the type of ground meat you choose. 1 cup water 2 eggs sauce mixture 1 bottle 16oz. Kraft bbq sauce, flavor doesn't matter. Just depends on what you like. You can even use another brand of bbq sauce. 1 16oz. can cranberry sauce -Prepare meatballs. Place on a cookie sheet and bake for 15 mins. in a 150 degree oven. Stir meatballs into boiling sauce to coat and finish cooking for 5-7 mins. To keep warm i usually serve them right out of the crock pot. |
