Need a cheap dip to take somewhere? Geesh, this stuff sounds AWFUL but oh so yummy! I hate black-eyed peas too but you cant taste'em in this dip. My nieces even love it. Its very cheap to make and makes a HUGE serving!!! 2 cans drained black eye peas 1 can drained short peg corn 1 can drained rotel 6 whole chopped green onions 1 bell pepper chopped 1 16oz Italian dressing (use Fat Free for fat free dip) Add everything in a bowl and mix it. Put it in the fridge before serving - its better when cold. You can serve with crackers, fritos, or regular ole chips. |
Here is another great one Here is a great and very easy cracker spread. 1 brick of Neufatchel cheese (like cream cheese, lower in fat and softer) Lightly toasted sesame seeds Soy sauce (light or regular) Pat the outside of the cheese brick with the sesame seeds. Place in a small plastic container with a lid (I use one about the size of the cheese). Pour soy sauce over the top of the cheese, filling container with soy about 1/3 full. Cover and let sit overnight in the fridge. I serve with Wheat Thins or other firm snack cracker, just go for it like a dip. It sounds strange but it is really good. |
Both of those sound really bad but Ill take your word for it that its good |
MY Mom always said you had to have black eyed peas on New years Day for luck the rest of the year!! I really like them- the way my mom cooked them! and i love dips- so will try them both!! Thanks |
Oh, Twalla, I don't know...I'm just not feelin' it! |

I know I know... and it looks even worse!!!! BUT seriously.... YOU have to try it!!!! Its soooooooooooooo good!!!! |
Mmm! it actually does not sound bad. But don't us Texans always need our Black-Eyes around New Years for luck!!!?! Of course we do. Man, your post reminds me... I need to buy me some now. |
Twalla, THANKYOU!!!!! I absolutely love that stuff. I make a batch every once in a while and eat it with crackers for a low fat high fiber lunch or snack. Yummy!!!!! Sometimes I add in black beans or kidney beans as well. I've never had the cream cheese recipe, I'll have to give it a whirl! |
 That sounds wonderful!! I can eat Blackeye peas straight from the can! [yes, I am weird!] My only problem ... my Patrick can't have anything with seeds!! I once almost pried his mouth open in a restaurant because he grabbed a pecan off my salad and popped it in his mouth before I could stop him! :( I try to make variations on lots of recipes using de-seeded tomatoes, jalapinos, etc. ... ever tried de-seeding a cucumber?!? :p Any suggestions?? I'm making this dip, if I have to do it when he's not home!! ;) |
do u serve w/tortilla chips or crackers? |
Mmm, I love black eyed peas so I will definitely give this a try. We do them on new years day for luck down here in FL too.:) Also greens for wealth.:D |
Here is a sweet dip thats great with plain ruffled potato chips: 1 can crushed pineapple in heavy syrup Philidelphia cream cheese w/ or w/o the pineapple Mix it all together and dip away. I bet you will eat half the bowl before you know it.:D |

Sorry ladies...I have to laugh...from the title of this thread I thought it was going to be another blonde joke! ;) I will try the dip though.....:) |
Both of these recipes sound good, since we are having new years eve in our house I'll try them both, now, sorry if this sounds stupid, but I have no idea what rotel is, can anyone tell me so I can go get it. |

1 15oz can black beans (drained and rinsed) 1 10 oz can Ro Tel tomatoes and green chiles (drained) 1/2 cup corn (frozen or canned) 1/4 cup finely chopped red onion 1/4 cup finely chopped cilantro 1 tbsp lime juice 1/4 tsp ground cumin Mix all ingredients and refridgerate for 30 min for flavors to blend. Serve with tortilla chips, tacos, burritos etc. |
Easiest dips i know It is my job to make the cheese dip at family functions. 1 lb (1/2 block) Velveeta processed cheese 1 can Rotel (I use Mild) Melt together & keep warm in the crock pot. Serve with tortilla chips. This dip looks kinda nasty, but tastes really good 8 oz block cream cheese 8 oz picante or salsa Mix both together with a fork for a chunky type dip but is better mixed with a mixer. Best served with Scoop Fritos! YUMMY!! By the way, rotel does have seeds from tomatoes and the peppers. |
Thanks Twalla, I had no idea. |

Thanks for the link, the "Guac" That Rocks sounds delicious too. I will look at the ingredients on a can when I go to the store. We loved Rotel before and I believe I can duplicate it without the seeds!! ;) |
