Eggplants...... I have several eggplants and were wanted some "tried and true" recipes...I have seen a lot on line...but wanted some recipes that people have actually tried and liked. THANKS! |
There are only THREE recipes for eggplant. Eggplant parmensan Eggplant bread (like zuchinni bread) Fried eggplant. :D |

Ok...i have no idea what its called cause my mom makes it....ALL i know is that its FANTASTIC!! Here's what you do....Slice the eggplant the long way..so you have a long thin slice...then dip it in a beaten egg and then put breadcrumbs all around it. After you have a bunch of slices....fry them each on both sides..until golden brown. Then ...add a slice of ham and a piece of mozzarella on top of each eggplant piece...roll the eggplant(like a little cannoli) and put a toothpick in it to hold placement. Put them all in a baking dish and add tomato sauce over it...cook for a few minutes til you see the mozzarella starting to melt. Taddaaaaaaa...its done! I guess its a different Eggplant parm. version. But oh my god its SOOOOO good! :thumbup: |
My husband makes a great eggplant dish. (please excuse me for the informality of this recipe, it's just sorta something we do - we've never written it out before. ;) ) First you peel, then dice up the eggplant. Then saute it in Olive Oil til it's "done", or soft, maybe a few pieces may become a wee bit browned. Keep turning it, so oil coats all the chunks & it gets evenly done. Then put it in a big pan like a 9x11 baking pan. Put some spaghetti sauce on top of that. Then put a packet of shredded Mozzarella on that. Bake til done, About 375 for about 20 minutes (just keep looking at it and if the cheese is melted & browned, it's done). It's good. And even better after it sits a while and all the flavors meld together. :) |
I make eggplant parm. I thinly slive my eggplant, dip it into a beaten egg or eggs, depending on how much you're making, then I dip it into a breadcrumb mixture (I add grated cheese, parsley and a little pepper). Then I fry it until they turn golden brown but be careful not to burn them. Then I take mozzarella and shred it and I start to layer my eggplant (the same way you'd layer lasagna). Lay some eggplant down in a dish, pour some homemade sauce over them, sprinkle some grated cheese and then mozzarella and repeat until you've used up all the eggplant. When I make this for myself, I omit the cheese and egg (I don't eat meat). :D |
I always go to All recipes – complete resource for recipes and cooking tips but, Mom used to slice them, dip them in egg and cracker crumbs and fry in grease until brown on both sides(of course salt and peppered them too) when we were little, she would tell us it was meat so we would eat it..that was sooooo good |

I really like Baba Ganoush...it's a YUMMY eggplant dip. I'd have to find the recipe, but basically it's roasted eggplant, pureed, and then you mix in garlic, lemon juice, olive oil, tahini, and salt, and serve it with pita chips. It's SO good...kinda like hummus. |
