Interesting but delicious meal! Ok, so Im embarrassed to say my cabinets, fridge and freezer leave much to be desired... they are EMPTY. I just spent $300 on books for college and just do not have money to food shop right now, so I had to get creative with some things I had. I made a meal last night that turned out REALLY yummy! I thought i'd share it if anyone wanted to try it. I took Italian sausages and peeled the casing off them. 2 links. I mushed them up so they were like hamburger and cooked them on low in a frying pan with a tad bit of water. When it was close to done, I added 1/2 a bag of mixed frozen veggies (corn, peas, carrots, lima beans) then added a large can of tomato sauce, some garlic powder, olive oil, red pepper flakes (to taste) and italian seasoning. I kept stirring it and let it simmer for about a 1/2 hour. I made a cup of instant white rice, added this to the pan with my mixture and mixed it all up. I let it sit for about 15 mins and the rice soaked up the rest of the tomato juice and I was left with a kind of jumbalaya I guess. It was quick and easy and it is soooo YUMMY!!! I might have to get the preportions right and save it for next years Yorkietalk cookbook! Anyways, try it and enjoy it!! :) |

Yeah I never thought that at 32 (owning my own home) I would get to say Im a struggling college student! hehe Seriously though, I never expected it to be soooo good. Try it! Just use whatever amounts of ingredients feel right to you, that usually how I cook. Hence why i cannot give you exact measurements. :) |
Did you use white or brown rice? I am going to make it next week for dinner |
I used white, but I think brown would be ok too. I have 4 more sausages and I have brown rice at home, maybe I'll make it again this weekend but with brown rice and see which one is better. I do have a feeling that white rice would be better for this though. :) |

Wow, thanks for finding this!!! I loved this meal and need to make something that I can take for leftovers for lunch at work this week! I think Im going to have to make this! :) It was sooo delicious! Lunch is hard for me because I seriously hate sandwiches so I never buy bread or lunch meat or anything, so I never have anything to take for lunch to work all week. Making something like this that I can have leftovers is my favorite! :) |
Sometimes the best stuff is the "refrigerator casserole" as my mom called it. When you just use what you have. I'm totally trying this when I get a chance. :) |
