Quiche Recipe Needed!! I tried making quiche last night and it came out terrible -- way too watery. I want to make a spinach, mushroom and mozzarella cheese quiche but I want it to be nice and thick. Does anyone have a good recipe for quiche? I know that once you have the main ingredients down (like how many eggs, heavy cream, etc.) you can add or subtract any veggies you want. I can make variations of quiches like asparagus and shrimp or spinach, onion and mushroom. I just need to get the main ingredients right. I've looked on-line but there are so many different versions and they are a bit confusing. Like some recipes use half and half while others use heavy cream. Some recipes use sour cream while others use mayonnaise. Some recipes use ricotta cheese, others swiss cheese, others sharp cheddar and then others use mozzarella. Some call for 2 eggs and then others call for 8 eggs!! :eek: So you can see what I am confused lolol :D HELP! :D Also, I use an unbaked pie crust as the shell. So don't worry about giving me recipes to make my own pie crust ... that's too much work for me! lol :D THANKS IN ADVANCE to all you wonderful cooks! :D PS - Some recipes use frozen spinach and others use FRESH spinach. I'd prefer to use fresh veggies if possible but I'm willing to try any of your recipes. I can always edit them later on and use fresh veggies once I make them a few times. :) |

I use one from the Atkin's diet book and it's really good. Here's the recipe if you want to give it a try: Crustless Quiche 4 ounces nitrate free bacon 1/2 yellow onion, thinly sliced 6 eggs 3/4 cup heavy cream 2 boxes (10 ounces each) frozen, chopped broccoli or spinach, thawed and squeezed dry 1/2 pound Gruyere cheese, shredded 1/2 tsp. salt 1/4 tsp. pepper 1. Heat oven to 350 degrees. Butter a 10 inch tart pan or a 9 inch deep pie plate. 2. In a large skillet over medium heat, cook bacon until crisp. Drain on paper towels; coursely chop. 3. Remove all but 1 TBSP. bacon drippings from skillet. Add onion and cook 5 minutes, until softened but not brown. In a large bowl, combine eggs, cream, broccoli, cheese, salt and pepper. Stir in bacon and onion. 4. Pour mixture into prepared pan. Bake 1 hour and 15 minutes ( tenting in the center with foil to prevent over browning if necessary) or until a knife inserted in the center comes out clean. Cool 5 minutes before cutting into wedges. My husband and I both love this recipe and I have had good luck freezing the leftovers to use later. |

There is an awesome recipe made with Bisquick. It's a vegetable quiche. I'll bet you could find it on their website. If not let me know and I can post it for you. |

If you use spinach make sure to squeeze all the water out of it or it will make your quiche watery |

I can't find the one I was talking about but these are basically the same recipes with different veggies. EASY QUICHE 1 1/4 cups Bisquick 1/4 c margarine, softened 2 T boiling water 1 pkg (6 oz) sliced Canadian bacon, chopped 1 c shredded Swiss cheese 4 med green onions, chopped 1 1/2 c half and half 3 eggs 1/2 t salt 1/4 t cayenne pepper Heat oven to 400. Grease pie plate. Stir baking mix and margarine until mixed. Add boiling water; stir until soft dough forms. Press in bottom and up side of pie plate forming edge on rim. Sprinkle bacon, cheese and onions over crust. Beat half and half, eggs, salt and red pepper. Pour into crust. Bake 35-40 minutes or until edge is brown and center is set. IMPOSSIBLE BACON PIE 12 slices bacon, crisply cooked and crumbled 1 cup shredded Swiss cheese 1/3 c chopped onion 1/2 c Bisquick 1 cup milk 1/8 t pepper 2 eggs Heat oven to 400. Grease pie plate. Sprinkle bacon, cheese and onion in pie plate. Stir remaining ingredients until blended. Pour into pie plate. Bake 35 to 40 minutes or until knife inserted in center comes out clean. The second one is more like the one I used except I used chedder cheese, brocolli, green peppers, red peppers. Hope these work for you. I'll keep looking for the other recipe. |

Spinach Quiche Rated: 5 out of 5 by 682 members Prep Time: 20 Minutes Cook Time: 40 Minutes Ready In: 1 Hour Yields: 6 servings "This savory deep-dish pie features herbed feta cheese that melts and mingles in every bite. The cheese is sauteed and mixed with spinach, mushrooms, Cheddar cheese and lots of garlic. This mixture is then combined with milk and eggs, and poured into a prepared crust. A bit more Cheddar cheese is sprinkled over the top, and then the quiche is slipped into the oven until it 's set." INGREDIENTS: 1/2 cup butter 3 cloves garlic, chopped 1 small onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 1 (4.5 ounce) can mushrooms, drained 1 (6 ounce) package herb and garlic feta, crumbled 1 (8 ounce) package shredded Cheddar cheese salt and pepper to taste 1 (9 inch) unbaked deep dish pie crust 4 eggs, beaten 1 cup milk salt and pepper to taste DIRECTIONS: 1. Preheat oven to 375 degrees F (190 degrees C). 2. In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust. 3. In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving. I've also made this one off the Knorr vegetable soup box. It is pretty good too and very easy. SPINACH QUICHE 3 eggs, well beaten 2 c. Swiss cheese, shredded 2 c. half & half 1 pkg. Knorr's vegetable soup mix 1 (10 oz.) pkg. frozen spinach, thawed & drained Mix together all ingredients. Pour into unbaked pie shell and bake for 45 minutes at 350 degrees or until knife comes out clean. |

I can make some good quiches, but, looks like you have a lot of them already...I do have an easy recipe for taco quiche, if you want it, and it's easy and comes out fantastic everytime |
