Cake please - NOW!!! Ok, I need a cake recipe by tomorrow. :) It's my son's 19th b-day (on Monday). I need something without tons of special ingredients but still moist and delicious. No dry cakes! Chocolate would probably be my first choice. I like to make cakes from scratch and I only can find one in all my recipe books that I have the ingredients for. Any help please????? BTW - it's Jolie's birthday on Monday, too.:D |
OK, this is with a cake mix but talk about moist. Get a german choc cake mix and a can of the german choc/coconut frosting. Make the cake like directions say and add the can of frosting to the mix....bake as usual. Really good |
This uses a cake mix also, but is very moist and yummy! My kids always want this for their birthdays! It's called Earthquake Cake and you don't even have to frost it!! EARTHQUAKE CAKE Preheat oven to 350°F. Spread 1 cup chopped pecans on the bottom of a buttered 13x9 cake pan. On top of nuts put 1 cup coconut, then pour the following batter over the nuts and coconut mixture without stirring. Mix 1 box German chocolate cake mix according to package directions. Pour the batter gently over the coconut and set aside. Soften one stick of butter (1/4 lb) and one (8 ounce) package of Phildadelphia cream cheese. Beat together with mixer then mix in one box of confectioners sugar (1 lb). Spoon the cream cheese, sugar and butter mixture over the top of the cake batter by the teaspoonful. Do not stir. It will cover most of the top of the cake. (sometimes we even double the cream cheese mixture! Yummy!) Bake in a preheated 350°F oven for 45 minutes. The cake will crack in the middle. That's why it is called Earthquake cake! It is so good!! If you want to make it even more decadent sprinkle chocolate chips on top before baking. |

Do you think you could substitute butter for the margarine and use layer pans instead of a 9x13? |

Wow! That really sounds good! Definitely not a diet cake. :D |

Sounds good, too. What do you use for frosting? |
Quote:
Nope, no frosting needed. It doesn't even need the chocolate chips. It is rich enough as it is and very, very moist. |

One more question - can this be baked in any other kind of pan? A bundt or angel food or layer pans? Thanks |
The cakes I posted are great layered or not, as well in a 9x13 cake pan My family loves them!! |
Oops I always use margarine, instead of butter unless it comes right out and says do not use margarine! |
