cooking for ONE i love to cook, but cooking for one is soo hard. I always have leftovers and end up throwing them away :rolleyes: any yummy recipes, good for one meal?? :) |

Good question! My husband is out of town for awhile and I went to the store and stocked up on canned soup and frozen dinners.:thumbdown |
I find that I have been using my slow cooker a great deal. For instance, some of our favorites are lentil soup, pea soup, vegetable soup, pulled pork (husband likes this) etc. I find that it is easier to cook like this, especially in the winter, and then freeze portions for later use. Sample Soup Recipe for you: one medium onion 3 or 4 gloves of garlic 4-6 cans of vegetable or chicken broth 1 pkg of lentils 1/4 pkg of sliced baby peeled carrots 1 tablespoon of oil (optional - I use Pam oil spray on the bottom of the pot) 1/4 sliced red bell pepper salt and pepper There you have a basic soup recipe. You can substitute vegetables, or make this a pea soup and add potatoes. When I am home I put the slow cooker on high for about 4 hours. I cook rice or pasta on the side and added to the soup you have a meal in itself. Enjoy! |
I think if you put one of those mini slow cookers, you could come up with a lot of single serving recipes. Also pastas are another easy meal to portion. |
I've been trying to use my crock pot a lot more too. I have a 2quart I think. Actually, I'm about to eat a dinner I cooked in it today...I'm hoping it turned out good! I should have two leftover meals from it which I do purposely so I'm not cooking every meal. I need something fast to eat for lunch. |
I too am in the same situation and like other I freeze as much as I can. Also, try getting some already cooked rotisserie chicken from the grocery store and make a different meals out of it everyday. For example, one day make chicken tacos, one day put it in a salad, one day make it a chicken sandwich, etc. |
I buy frozen chicken tenderloins (not cooked or breaded) and keep them in the freezer, I pull out one serving (3), thaw them in the microwave and use them for a one meal stir fry, fajitas, toss it in with pasta, saute them in a pan with mushrooms, or even make a chicken sandwich with them. |
