How do you make sweet potatoes/yams?
 
I've been told to bring them for xmas dinner. I never eat them so I for sure don't know how to cook them. Can someone give me a good recipe. With marshmallows on top if ya got it. Thanks ladies!!

If you buy the ones in a can... yams...

Drain the liquid off. Pour them into a dish. Top with a little butter, brown sugar and chopped pecans. Top with mini marshmallows and bake until the marshmallows are golden.

That's all I do. No recipe, lol.

Here is one that has been passed on to me by a great friend down South....I get asked to make this all the time.


Sweet Potato Casserole
Bake potatoes first - I like to wrap them in foil and bake them like you would a white potato for about an hour or so. After they cool a bit the skin is easy to peel off and they are soft and ready to mush!)
Ingredients
1 stick butter (soft)
1 T. of vanilla (use real please and not the imitation)
3 cups swet potatoes (I buy 4-5 large sweet potatoes)
1/2 cup sugar or Splenda
2 beaten eggs or egg substitute
1/4 cups evaporated milk
Topping
3/4 cup brown sugar
1 stick hard/cold butter
1/2 cup flour
1 cup chopped pecans

Mix potatoes, sugar, vanilla, evap. milk, eggs and butter. Pour in buttered casserole dish. In a separate bowl combine brown sugar, flour, butter and mix well with fork to make crumbs. Add pecans to the mix. Sprinkle on top of potato mixture and bake for 30 minutes at 350 degrees (bubbly).

Enjoy - I could just eat a bowl of the topping alone - it's yummy.

I do every thing from scratch. I bake 1 sweet pot. For every two people. 400 oven until fork tender. I don't wrap em just throw em on a cookie sheet try not to poke em too much because the sugar leaks out and make a horrible mess. I do line the sheet with foil or parchment for easy cleanup. When the are done. I split them and scrap them out into the dish I will cook them in. I season to taste by sprinkling brown sugar and cinnamon. Start with a tsp of sugar cus they are sweet already. I use real butter. I drop a tbs or two and mash it. Well not much to mash. U can just do it with a fork. I add just a tbs or so of milk. Stir it up. Spread it out. I use the huge marshmallos because they fluff up so pretty. I brown it lightly in the oven. Viola'. Ur done! Ok. That was a lot to type on my phone so u better try it one day!!! Lol

I use fresh sweet potatos and just peel them and slice them. Place them in a baking pan with lots of butter, spinkle LOTS of brown sugar on top and then cover with aluminum foil and bake until tender. Then put mini marshmallows on top......ummm good....:thumbup:

i made them for thanksgiving they were sooooooooooo good we will be making them every year now !

we drained the can put the in a pan put the marshmellows on top put it in the oven til hot & melted & thats it !!

Hmm, it seems like you all make sweet potatoes for dessert. I make them as a side dish with my main course.

I like to slice them in rings and place them in a baking dish, season, and cook under a roasting chicken. The potatoes get soft and juicy and flavourful from the chicken.

Citrus-lime mashed yams are delicious, too. I peel and boil them, mash them up with butter, add salt, pepper, lime juice, and orange zest. It's a really yummy fresh dish.

I'm a huge fan of sweet potatoe fries! I cut the yam into fry-like strips, toss them in a little olive oil, season with salt, pepper, and a dash of brown sugar, and bake until crispy.

Mmm, I love love love sweet potatoe fries!

I make this every Thanksgiving.

Candied Sweet Potatoes (or Yams)

2 lbs of sweet potatoes (about 6 med potatoes)
1/3 cup brown sugar (packed)
3 tbs butter
3 tbs light cream or milk
1/2 tsp salt

Cut potatoes crosswise into 1/2 inch slices. Place in pan of water. Bring to boil. Cook for about 30 to 35 minutes or until tender. Drain and Slip off the skins.

In medium skillet, combine brown sugar, butter, cream and salt. cook over medium heat stirring constantly until smooth and bubbly. Add sweet potato slices to pan, stir gently until glazed and heated through. Pour sweet potato and sauce into casserole dish. Place marshmellows on top. Put under broiler or high temp oven for just a few minutes.

Yummy.....Enjoy.

A savory recipe...NOT SWEET!
 
I have made the candied/marshmallow yams several times, but sometimes during the holidays it's just too much sweet! A friend of mine gave me her mom's recipe-her mom is from the east coast, married a South African, and lives in New Mexico, so I couldn't tell you exactly where it came from... but it's the BEST yam recipe I've ever had!

5-6 yams, peeled, and cut into 1" cubes
olive oil
1-2 tsp rosemary (dried), or 3 sprigs, fresh
Kosher salt
garlic, diced-I used about 4 large cloves
1/2 cup pine nuts

Preheat oven to 350 degrees

Pour a generous amount of olive oil into a baking dish, add cubed yams and garlic pieces, and toss to coat. Season with salt and rosemary, stir. Drizzle olive oil over the top, and roast in oven about 35 to 45 minutes until lightly browned, stirring every 10-15 minutes. Top with pine nuts, bake 10 more minutes. Top with additional pine nuts and parmesean reggiano cheese to serve.

If you can buy the Sugary Sams yams in the can - there is a fabulous recipe on the back of the can - they are SOOOOO GOOD!!! I can't remember it but it calls for coconut (and I don't like coconut), pecans, brown sugar, butter and marshmallows.

It is RICH and GOOD!

I was thrilled to see this thread. And i am going to print this out and try each and every recipe once a month for the next few months.
I am learning to cook now that I have time.

I have done the canned sweet potato route and it is the easiest and I recommend it. And very yummy.

But I got adventurous this past T/Giving and I peeled and boiled about 6 sweet potatoes after cutting them up kinda cube like.
I added melted butter, mashed them a bit, and used a mixer to make them smooth.

added brown sugar - and used the mixer again to make sure it was spread evenly.

then put them into a 13" square Pyrex dish to bake in a 375º oven with little marshmallows on top. Baked about 30 minutes and checked on it.

You do not want the marshmallows to burn.

My first try came out yummy (just like Boston Markets)
