Sweet Potato Recipes? Anyone have a simple sweet potato recipe? |
yummy :) I have a FABULOUS sweet potato casserole recipe from a cooking light cookbook: here's the original recipe but I made 1 modification--I omitted the pecans (since many people can't have nuts) and I used 1/4 oats in it's place. I also baked it in the oven @ 375 for 30 minutes when I was pressed for time. Sweet Potato Casserole with Praline Topping Recipe By : Cooking Light Annual Recipes 1998 7 Points per serving 1 cup all-purpose flour 2/3 cup packed brown sugar 1/4 cup chopped pecans -- toasted 1/4 cup light margarine -- stick 1/2 teaspoon ground cinnamon 2 1/2 pounds sweet potatoes -- peeled and halved 1/2 cup granulated sugar 1 1/2 teaspoons vanilla extract 1 large egg white 5 ounces evaporated skim milk vegetable cooking spray For extra flavor, the streusel is stirred into the casserole plus sprinkled on top. 1. Preheat oven to 350º. 2. Combine first 5 ingredients in a small bowl, stirring to form a streusel. Set aside. 3. Place potatoes in a Dutch oven; add water to cover. Bring to a boil; cover, reduce heat, and simmer 30 minutes or until very tender. Drain well; place in a large bowl, and mash. Stir in 1 cup streusel, granulated sugar, and next 3 ingredients. My family's favorite way to have sweet potatoes is....MASHED. Super simple. I scrub the potatoes, prick the skin, rub liberally with butter and roast them until they are soft and squishy. Peel the skin off, dump potatoes in a bowl, add butter, salt, and pepper. Mush them up and Voila! |
Here's a recipe from Sheryl (I'm not sure what her username is on YT...sorry). :( Candied Yam Souffle 1 stick butter 1 cup light brown sugar 1/2 cup chopped pecans 2 large (40-ounce) cans large yams or sweet potatoes, drained 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1 (12-ounce) jar marshmallow topping Preheat oven to 325 degrees F. Melt butter in a saucepan over medium heat. Add brown sugar and pecans. Simmer for 3 minutes. Meanwhile, place drained yams in a large bowl and mash finely with a potato masher (leaving some chunked pieces). Pour sugar/pecan mixture over yams. Stir until combined thoroughly. Add in cinnamon and nutmeg. Transfer to a metal pie pan. Top with marshmallow topping. Bake for 15 minutes at 325 degrees F. Remove from the oven and raise the oven temperature to 400 degrees F. Bake for an additional 10 minutes to brown the top, watching carefully to keep from over-browning. Serves 8 My mom made it for our Thanksgiving yesterday and it was AMAZING! Here's a Weight Watchers recipe I like: Crispy Sweet-Potato Fries 1. Preheat over to 450. Halve the potatoes and cut into 1/2 inch wedges. Toss with the oil, salt and pepper in a medium bowl. 2. Arrange the potatoes in a single layer on a nonstick baking sheet. Bake, turning once, until browned and crisp, about 35 minutes. INGREDIENTS 2 pounds large sweet potatoes, scrubbed 1 tablespoon olive oil 1/4 teaspoon salt 1/4 teaspoon freshly ground pepper Per 1 cup serving: 234 cal, 4g fat. (4 w.w. points) |
