Favorite holiday recipes.... Well the holidays are right around the corner and I was wondering what all your favorite recipes are, what is the dish that you make every holiday for your friends and family? I am hosting Thanksgiving for the first time at my new home this year and obviously need some really tasty dishes and desserts. I love making new things and am hoping I can get some really great ideas from you all! Happy Cooking! I will start.. Pumpkin Cheesecake Bars 1 package pound cake mix 3 eggs 2 Tablespoons butter/margarine, melted 4 teaspoons pumpkin pie spice 8 oz. cream cheese, softened 1-14oz. can Eagle brand sweetened condensed milk 1-16 oz. can pumpkin 1/2 teaspoon salt 1 cup chopped walnuts In a large bowl, combine cake mix, 1 egg, butter, and 2 teaspoons pumpkin pie spice, mix until crumbly. Press onto bottom of 15X10 jelly roll pan, set aside. In a large bowl, beat cheese until fluffy. Slowly beat in condensed milk, 2 eggs, pumpkin, 2 teaspoon pumpkin pie spice and salt. Mix well. Pour over crust; sprinkle nuts on top. Bake at 350 degrees for 30-40 minutes. Cool. Cut into bars and refrigerate. Enjoy!!;) |

I have no idea what to do for the holidays. I have been eating an antiinflammatory diet to get rid of joint pain. I have been pain free for 3 months and have dropped 25#. I am having to develop new recipes and it is so time consuming!! Holidays will never be the same for me...food-wise but at least i feel great :rolleyes: |
Are you looking for more dessert dishes or side dishes? I have a wonderful sweet potato casserole that was passed on to me by a dear friend down south that is to die for and I keep getting asked to make that every year. Or my infamous cheese cake made with Philly Cream cheese and sour cream. Your pick. |

What a great thread idea :) I'm spending Thanksgiving alone this year but that's not going to stop me from making myself a feast :) I'll have to think about some recipes and go through my recipe binder!!!! |

Sweet Potato Casserole Bake potatoes first - I like to wrap them in foil and bake them like you would a white potato for about an hour or so. After they cool a bit the skin is easy to peel off and they are soft and ready to mush!) Ingredients 1 stick butter (soft) 1 T. of vanilla (use real please and not the imitation) 3 cups swet potatoes (I buy 4-5 large sweet potatoes) 1/2 cup sugar or Splenda 2 beaten eggs or egg substitute 1/4 cups evaporated milk Topping 3/4 cup brown sugar 1 stick hard/cold butter 1/2 cup flour 1 cup chopped pecans Mix potatoes, sugar, vanilla, evap. milk, eggs and butter. Pour in buttered casserole dish. In a separate bowl combine brown sugar, flour, butter and mix well with fork to make crumbs. Add pecans to the mix. Sprinkle on top of potato mixture and bake for 30 minutes at 350 degrees (bubbly). Enjoy - I could just eat a bowl of the topping alone - it's yummy. |

I have a couple great recipes for the holidays - several I submitted for the cookbook - I was hoping we would have that soon. I have a Cranberry & Wild Rice Stuffing recipe - that is great as a side dish & extremely festive looking - especially for Christmas, but I get a lot of requests for it at Thanksgiving. Would you like that recipe?? What other type of things are you looking for? |

cajun turkey? anyone out there deepfry their turkey? We do that every year, It's soooooooooooooooo good but I kinda miss that turkey smell permeating the house. |
A pretty and great tasteing Dessert We always make this Its Yummy Punch Bowl Cake. Use a punch bowl or a glass clear bowl so you san see the layers One Vanilla cake mix, Bake and have ready coolwhip walnuts Can of cherry pie filling can of the small oranges box of van instant pudding, mix and have ready. Crushed pineapple drain In the glass dish just start out with a layer of cake then add each ingredients over and over until you reach the top of the dish. then decorate the top with what ever you have left and few walnuts , cheeries, on the coolwhip. Its a beautiful dish and so very Yummy. |

Cranberry-Wild Rice Stuffing (Serves 12-14 -- makes about 6 cups or enough for a 10-12 pound turkey, but also great by itself.) 1/2 cup wild rice 1/3 cup brown rice 1 cup chopped cranberries 2 Tbsp brown sugar 1/2 cup chopped scallions 1/2 cup slivered toasted almonds 2 Tbsp grated orange peel 1/2 cup melted butter 1 tsp salt 1 tsp pepper Combine wild and brown rice and place in a saucepan. Pour boiling water over rice and set aside, covered, for one hour. Then drain the rice, add fresh boiling water to cover by half an inch. Bring to a simmer and cook gently until rice is soft but not mushy. Drain well and set aside. Mix cranberries with sugar. Combine cranberries with rice and add the remaining ingredients. |

Roquefort Grapes 10 oz almonds or pecans 8 oz cream cheese, at room temperature 1/4 lb Roquefort cheese, at room temp 2 Tbsp heavy cream 1 lb seedless grapes Preheat oven to 275-degrees. Spread nuts on baking sheet. Bake until toasted. Cool slightly. Chop toasted nuts in food processor, and then spread nuts on a platter. In a mixer bowl, combine cream cheese, roquefort cheese and heavy cream. Beat until smooth. Drop grapes into mixture. Stir by hand to coat. Then roll grapes in nuts. Place grapes on tray lined with waxed paper. Chill. *you can make cheese mixture ahead of time and refrigerate or freeze Goat Cheese & Apple Tartlets (serves 32) 2 sheets frozen puff pastry 10 oz sliced goat cheese 2 granny smith apples 2 Tbsp olive oil 1 Tbsp chopped fresh lemon thyme Preheat oven to 415 degrees. While pastry is frozen cut into 2-inch squares. Place on lightly greased tray, let thaw for 5 minutes. Lay a cheese slice in the center of each square. Core unpeeled apples, slice apples thinly. Inter weave 2 to 3 slices of apple over pastry. Lightly brush apples with olive oil. Sprinkle with salt and pepper, then the chopped thyme. Bake 20 to 25 minutes until brown. Shrimp Butter 1 (6 oz) pkg frozen shrimp, deveined 4 Tbsp mayonnaise 1 Tbsp minced onion 1/4 tsp garlic powder 2 sticks butter, softened 1 (8 oz) pkg cream cheese, softened Mix all ingredients. Beat until light and fluffy. Serve with crackers or vegetables. Freezes well. |
Desserts Pumpkin Crisp (serves 8-10; Prep 15 minutes; Bake 1 hr 5 min; Stand 10 min) 1 (15 oz) can pumpkin 1 cup evaporated milk 1 cup sugar 1 tsp vanilla extract 1/2 tsp ground cinnamon 1 (18.25 oz) pkg butter-flavored yellow cake mix 1 cup chopped pecans 1 cup butter, melted whipped cream (optional) ground nutmeg (optional) Stir together first 5 ingredients. Pour into a lightly greased 13 x 9-inch baking dish. Sprinkle cake mix evenly over pumpkin mixture; sprinkle evenly with pecans. Drizzle butter evenly over pecans. Bake 350-degrees for 1 hr to 1 hr 5 min or until golden brown. Remove from oven and let stand 10 minutes before serving. Serve warm or at room temperature with whipped cream, if desired. Sprinkle with nutmeg, if desired. Date-Nut Bars (This recipe is one my grandmother had from her first little cook book when she got married in 1925. Grandma died in Feb. 2007 at 103 1/2 yrs old) 1 cup nuts 1 cup sugar 3 tsps baking powder 1 lb dates, cut up 3 eggs 1 1/2 cups flour 1 tsp vanilla Beat eggs well; add sugar, baking powder, vanilla and dates; combine thoroughly. Add flour and stir in nuts. Spread batter into greased 15 x 10-inch baking pan. Bake at 350-degrees about 20 to 25 minutes, or until lightly browned. Swedish Apple Pie 4-6 apples, peeled (may need more, depending on size) Cinnamon Sugar 3/4 cup melted butter 1 cup sugar 1 cup flour 2 eggs 1 cup walnuts Slice apples and spread in a greased pan. May use a deep dish pie pan, a round cake pan or 9 x 13 pan. Mix cinnamon and sugar; using mixture coat apples well. Mix butter, sugar, flour and eggs. Fold in walnuts. Pour this batter over apples and bake at 350 degrees for 40 minutes. |
