Tendon is so good. When it's done right it is just so soft and melts in your mouth. Feels like fat, but it's not fat! Now for people who don't like eating fat I can understand not liking it bc of the texture, but it is just so yummy and more for me!
I just bought some today from the chinese market. I'm going to make beef noodle soup with chunks of beef and tendon with meatballs and preserved veggies in spicy broth.
