As a breeder I would advise you against taking his food away - the reason being is that he is small ( and I might add that he sounds to be getting the hang of potty training if at 5 mo he is doing as well as you say ) and since he is small he needs to keep his blood sugar stable and he can only do that by having food when his body needs it. Remember food if fuel for his system and with out fuel he will run out of gas ( well not literally ) and since he has that many hours alone I strongly urge you to keep some food available at all times and I am not going to insult your intelligence by telling you to keep fresh water always there as knowing that should be a requirement to owning or being owned by a fur baby.

Good luck and kiss that baby for me as I never saw one I didn't want to pick up and hug and kiss.
