Here's one of my favorite stand-bys- They're pinwheel thingys.

Take a sheet of puff pastry and flatten out a bit- you can use a rolling pin, I just smoosh it with my hand. Spread a layer of herb cheese spread and top with prosciutto and roll. Wrap it in saran wrap and freeze until needed. When you want to serve it, let it thaw a little, slice into about 1/4 in. slices and bake according to the puff pastry directions. Everyone loves these and they look pretty fancy but are SUPER easy! The puff pastry comes two to a box so I usually make two rolls and I'm set anytime I need to pull out some munchies.
