I use this recipe except I use it on chicken legs (I use butter instead of olive oil). It tastes like fried chicken but you don't have the mess all over the stove. To make gravy, I scrape the crumbs out of the pan, after the chicken is removed, add a little cooking oil, flour (or left-over Bisquick mixture), salt, and pepper into a skillet. Let this brown, then add milk and let it thicken. Goes great over baked or mashed potatoes.
