Kaiserschmarrn, Emperors pancake Kaiserschmarrn Emperors Pancake
For 1 Person:
3 tbsp milk
1 tsp flour (or wheat flour)
¼ cup raisins (soaked in rum if desired)
2 eggs (separate whites and yolk)
½ tsp vanilla flavor
a little bit of salt (no salt if you use wheat flour)
1 tsp sugar or sugar sustitute
1 tsp powdered sugar
1 tbsp butter
Mix yolks, milk, salt, sugar, vanilla and flour
beat egg white until stiff
fold carefully

Melt butter in a pan (not too hot, 3 to 4!)
Fill dough into the pan, sprinkle the raisins over the dough and close with a lid.
Let it get golden on one side, then turn like a pancake.
Let it get light golden on the other side too.

Break the pancake in pieces, don’t cut, take the spatula or two forks. Let it sit in pan for about 30 more seconds.
Serve on a plate with powdered sugar (or sugar substitute) and apple sauce or plum preserves on the side.
