It's pretty different from CA - I can tell you that for sure. Folks are pretty conservative. It's flat, you can see forever and there are very very few trees or any vegetation. It's dry and crops are irrigated, otherwise nothing would grow. It's hot hot hot - but then it is hot everywhere in Texas right now. It's cold in the winter and it can snow sideways!!! The wind blows pretty much in all seasons. They can have dust storms that are pretty spectacular. The wind blows and the dust is so thick it looks like a big brown cloud. There's quite a few rich folks - lots of gas and oil in the area. I would DEFINITELY visit and spend a few days in the area before making the move. I live in Austin TX, I love it, and would never consider living in west Texas (Odessa area) it's way too conservative for me - but that's just me. As someone said though, the cost of living is much much less than CA.
