I dont know in dogs, but in rabbits lettuce will swell up inside and too much will cause death. I found out the hard way. When I was 9 yrs old I had a rabbit names Bugs. He love Lettuce. So we fed it to him as a snack. Well he died and the vet said everyone thinks rabbits should have lettuce and they shouldn't cause it tends to swell up when being digested???? I dont know if this would be the case with doggies too. But I would ask your vet first.
