I agree with the previous post. My two aren't housetrained yet, but we are crate training and they both hold it all night, they are almost 5 months and 9 weeks. I don't leave food or water down for them all the time. food is at mealtimes and I'll put the water down through out the day. If they don't drink, and/or walk away from it, I'll put it back up.
They don't get fed after 6:00 in the evening. Because my 5 month old can go up to 5 hours before pooping and I have to go to bed. If he doesn't poop before bed, he almost always will poop in his crate over night. They've never peed though. I don't let them drink for about 1 to 2 hours before bed. Then they are taken out quite a bit before actual bed time.
If you are restricting water intake near bed time, I would probably go see a vet about it. Just because of her surgery when she was younger.
