If you like porkchops I have a really good recipe for a pork chop casserole, and also a jambalaya(sp) that I fix
Porkchop casserole
Put just enough oil in bottom of skillet to cover it.
Cut up 4 tomatoes in wedges, Chopped onion, Chopped bell pepper I just put in however much I want it's not really measured. Mushrooms again I normally use 2 small cans drained, Italian seasonins, minced garlic, oregano. Simmer until have to drain the juices off in a collander.
Microwave 2 pouches of rice. Fry pork chops on each side just long enough to brown. Do this while rice is cooking.
When everything is done layer rice, tomato mixture and pork chops until you use it all in a casserole dish sprayed with pam and bake at 325 for 45 min to an hour depending on oven.

2 tsp butter or margarine 1 onion and bell pepper chopped, mushrooms, italian seasonings, garlic, oregano. (Add to margarine in stock pan once it is melted.
Add 1 can diced tomatos undrained, 2 bags of microwave rice(cooked) 4 cups of water and salad shrimp(frozen)
Heat until hot.
Both of these recipes are doubled because I make enough for leftovers for my husband for work the next day and to also have again later in the week.
