Chicken Marsala
Ingredients:
4-6 skinless frozen chicken breasts
½ C flour
¾ C Italian bread crumbs
1 C marsala wine
3 cloves garlic
dash of salt and pepper
1 container sliced mushroom in your fresh veggie section of market
½ C water
¼ C olive oil
¼ C capers
Mix flour and breadcrumbs together in baggie pour onto plate
Heat olive oil in skillet over medium heat
Rinse chicken, and coat with flour/bread crumb mixture, brown in olive oil
Throw in remaining ingredients, simmer on medium low with lid for about ½ hour turning chicken ½ way through. I put capers in last, for about 5 minutes. I also add some remaining flour/ breadcrumbs and a bit more marsala wine depending on texture and consistency. Serve over angel hair pasta.
