CARROT CAKE
2 C. Flour
1 t. baking powder
1t. baking soda
1 t. cinnamon
2 C granulated sugar
4 eggs
1 1/2 C. Crisco Oil
3 C. grated carrots
the following ingred. are optional:
1 cup chopped walnuts
1 can of crushed pineapple, MUST BE DRAINED TO almost dry
Sift together the flour, soda, baking powder, cinnamon, and granulated sugar real good.
Add the Oil to the dry ingredients above, Mix well by hand with spoon. (DON'T USE ELECTRIC MIXER IN PREPARING THIS RECIPE.)
Add eggs one at a time mixing well after each.
Slowly blend in the carrots.
(I always add the pineapple and walnuts next and even have added 1/2 Cup of coconut and !/2 cup of raisons).
Prepare 2, 9 inch prepared cake pans (pre-greased and floured) Bake for 45 minutes at 350.
Frost with cream cheese frosting, topped with bit of coconut and finely chopped walnuts. |
