Baked Capri Salad to be served as an appetizer or side dish
Ingredients:
2 large beef-steak tomatoes
1 log of mozzarella cheese
1 small can sliced black olives
Fresh basil as garnish (optional)
Olive oil and balsamic vinegar
Preheat oven to broil
Each serving is three layers of:
First tomato, cheese, olive, again, and again, ending with cheese/olive/and the optional basil on top.
Broil until cheese is crusty on top, and drizzle with olive oil and balsamic vinegar.
Sometimes I will change it up by adding a slight bit of garlic in the second layer.
