She could be having night terrors or bad dreams. Dogs do dream, and not all dreams are good ones.

The biting as she wakes might or might not be related. Dogs, if you startle them out of a sound sleep, sometimes “lash out” simply because of animal instinct. My rescue yorkie is both vision and hearing impaired, and he usually sleeps peacefully but very soundly. If I startle him awake by touching him, he will sometimes lash out … so I’ve learned not do that. It’s not his fault and there’s certainly no way to train him out of it.

I hope your little rescue girl is feeling better.
