Skin on is necessary, the necessary omega oils are in the skin (hopefully). A thigh to start is too big a bone, and too much bone to start off with. One she has the hang of the smaller bones, you can graduate to the chicken thighs, or legs, though neither has enough muscle meat.
If you feed too much liver, they can have diarrhea, and too much bone in one meal can constipate. So it is better to mix them together to start.
Most pork bones are going to be too much for a 6 lb dog, but as she gets used to it, you may be able to give her pork ribs that she can really work on.
