I would suggest you get a baby gate or an ex pen to confine her to the spaces you want her to stay in for at least the first few months. I've found that rehomed dogs usually take a few weeks to get attached to you, and in the meantime will wander off in the house doing god knows what. It's better for potty training and in general for them to be near you so you can keep an eye on them.
Another thing I would really consider is to feed on a schedule. That way you know if she has eaten. If they haven't eaten in a day or so they may not be feeling well. Also that will mean they will usually need to go to the bathroom around the same time each day as well. Go for walks at the same time each day. Dogs love schedules and look forward to them.
