I usually eat salmon roe on the boat fresh out of the fish, just an annual thing, in the salt water, once they hit the rivers, I haven't eaten it. I cure them for river fishing, bait. I haven't tried curing for eating. Intriguing, I'll try to remember this August, prior to then, the eggs are pretty small. I bet a sea salt and sugar wet brine for an hour or so would be about all that is needed.
I scuba dove a lot in the 80s, we had a pretty good number of urchins then, not sure about now.... I tried it once or twice fresh... I don't recall enjoying it.... Sea Cucumber is the bomb though! Good stuff!
I haven't seen a lot of eggs used for sushi here... LOL the sushi I do eat is usually from an all you can eat and there is always other things competing to get eaten.
