Wait, you let your vet give shots when she was still having bloody stools?? If yes, I'd find another vet. A dog should never, ever be given any vaccines when having diarrhea or any other health issues. That poor baby .

I don't think your vet is correct in saying it was the "amount" of food causing diarrhea - that's just not how the GI system works.
