I have been eating very little meat and carbs lately, and it's much easier to make meals that fit into this criteria if eating at home. In fact, I feel now if the piece of meat is too big I get a bit grossed out.
I've been making my own hummus too. So easy and cheap and less fat than the store bought kind. I keep some ready in the fridge and eat it with raw carrot sticks or broccoli.
And have you guys heard of bean thread noodles? They are made from mung beans so not a lot of carbs. They taste best as the base of a cold noodle salad. I've tried it in hot soups and it doesn't really do it for me. There's also noodles made from yam that come in different shapes, but a lot of non asians don't like it. It has a bit of a smell to them (I don't notice it actually but many do).
My fave thing to make right now is a salad with cucumber, fresh corn, onion, tomato, Greek yogurt and either dill or tarragon, and a bit of lemon and salt. I hardly bother with lettuce for salads anymore. I think they make the salad look bigger than it is and that's why you get hungry again so quickly.
For dinner I've been roasting veggies in the oven; zucchini, broccoli, garlic, onions, carrots, with some oil or butter and salt. And I serve it with some pasta sauce, and I hardly miss the pasta! You can even make your own pasta sauce. The canned stuff has added sugar.
