Fast forward a year and a half. I have learned to switch things up. When I am craving something "carby" for breakfast (I think that's the meal that was the hardest), I eat oat bran. It is high in fiber. On days that I am running it provides the extra kick I need. I have found many excellent low carb websites with great "normal" foods. My experience was that stagnant scales would happen. I would go 2 or 3 days with no change and then finally, boom, they would move again. Hang in there. It gets better.

On a final note, is it possible that you aren't eating enough carbs even for low-carb? We never went under 20 a day, not even in induction. Maybe you should add in some fruit. I would eat strawberries doused in whipped cream and tell myself it was pie.
I always eat at least the allowed amount, most days probably more and that is in the form of veggies. for a way of life eating plan you way sounds good, eventually when I loose 40 more pounds I will try to eat cleaner, less processed foods, less bad carbs like white or French bread. I eat plenty of veggies and fruit but both are limited in the quick weight loss plans I have been on. So until I reach goal weight I figure I will be strict for about 2 weeks, take a day or two off and eat under control but enjoy some of the forbidden foods. I tried things like Weight Watches and since they allow for so many food choices I always let the portion sizes get out of control.
