I use that kind a lot...they sell them at the Asian grocery store and I've also gotten them at Whole Foods...yummy and very sweet! I don't think they contain the beta carotene or as much vitamin A like you'd find in a normal orange sweet potato but they're still nutritious and have good fiber. I put them in Toki's home cooked food as a base. My mom makes this recipe with the white/yellow flesh sweet potatoes...it's a common side dish served in Korean restaurants too. I definitely prefer the texture of them to the orange ones.
