I made cupcakes for a party a few years ago. I like to keep it simple, basic and healthy...no sweetener, no sodium. I used one can of pure pumpkin, one large egg, and about 1.5 cups of ground old fashion oatmeal. I would lightly beat the egg, then fold in the pumpkin and oatmeal. I used mini-cupcakes pans, wiped with organic coconut oil, and filled with about 1 tablespoon of mixture. Bake on low setting for about an hour. Check to make they're done and let cool. Frosting - Greek yogurt, and grated carrot sprinkles
