I absolutely second the use of either a tear away stabilizer in between the feed dogs and the knit. Stretch the knit, not the regular fabric so that it will have "give" when the pieces are together.

Don't give up. Look in the remnant bin at your fabric store for some inexpensive pieces of knit to practice on and you will get the hang of it in no time. Knits really aren't scary r hard to work with. It's just a small learning curve.
