When you are cooking - either a signature dish or a new recipe, do you have "go to" ingredients that you reach for knowing they will add that extra something?
I use a lot of the following ( not usually in the same dish)
Sazon seasoning
Dill pickle juice
Pickled pepper juice
Lamb stock cubes ( thanks Sally

)
Lemon or lime juice (acid brightness!)
Maggi Seasoning
Fish sauce
Oyster sauce.
Horseradish
Sofrito
What should I add into the mix that I'm missing out on??
