I think it's when they put it on the grill. That was how they prepare them at Spago. I ate there once for my bday a long long time ago.

We got counter seating and there's a good view of the open kitchen. There was one guy, his only job was to halve live lobsters in half. I actually ordered the lobster there. It was good! Easier for me to get to the brains too.
