Haha! I love your story! Sorry, I don't know about the diseases. She's probably fine, though. Cats kill mice and eat them all the time and are fine, so the short-lived altercation between Ruby and mouse probably did no harm. Set out a couple live traps on the kitchen counter and check them several times a day. The live traps have the mouse inside so the cats can't play with it's dead body in the trap before you find it. Then you can just let it go outside.
