It's powder or liquid substituting for cream. Tastes somewhat like cream but doesn't have the fats or calories of cream. It is a very poor substitute for it but it keeps the waistline MUCH trimmer than adding actual cream when you want to lighten your coffee or splurge with a different taste. So you trade taste and calories and fats for few calories and who knows what else?????????? (That's why I usually just drink black coffee - I'm scared to use the stuff on a regular basis.)
