She gobbled down her food probably because she is not used to having lunch this late. When she'll get used to that habit, it'll be ok.
Jackie always eats fast - hungry or not. It's just her thing.

But i never had any problems with that so ...
Her stools are soft? What kind of food are you feeding her? Did you change her diet recetly? Does she eat kibble?
Pumpkin is great. Jackie had a soft stool as well (she got poisoned outside ... ), but we gave her boiled rice and it was ok. She loved rice and her stool went from totally soft to hard as a rock.
I wouldn't supplement all of her food with pumpkin. I didn't do that with rice. Jackie just had a bit of rice with her food. Or she had an extra meal during the day.
About free feeding (just my opinion): I wouldn't free feed her now. I have been thinking about free feeding JAckie, but i think she is so used to her feeding routine she would just eat constantly if i would free feed her. But again - that's just my opinion.
