I found out about Tamari when cooking for a friend who was very gluten intolerant..she has celiac disease..
anyway tamari is the old way of brewing soy sauce, wheat is not added to speed the fermentation so the flavor is truer and there isn't any gluten.

Msyorkietown.. do you have an "island" background? A lot of your "cooking" sounds very much like some of my Jamacian friends.
It is interesting the blend of cultures in "Island" food.. so yummy
