Chicken fried portabello mushrooms. I dip the large round flat portabello mushrooms (I take off any stem) in egg/milk and then flour and brown them on both sides in just a bit of oil. Then I put them in a covered pan or corning dish and into the oven at 300 degrees for an hour or so to steam and get real tender.
We are also having fresh steamed yellow squash and turnips. My mom is baking apples with a bit of brown sugar and cinnamon.
