In certain situations, as with a newborn litter of puppies, eating poop is instinctual and completely normal. A mother with pups is wired to keep her den clean so as not to attract predators with scent cues. Thus, she quite often will clean up after her young by consuming their poop.

Dogs act so much out of instinct, I've always thought it something that many of them instinctively do, unless stopped. And to survive in the wild, many dogs had to eat animal stools when food was/is scarce.
I think they roll in poop/carrion instinctively, too, just to invite the immense & intense attention they would get from other dogs in the pack or family. You will have to admit, a dog covered in poop gets all the dogs' immediate attention.
