It can be any kind of chicken you want, I usually go for the cheaper stuff like thighs, or whats on sale at the time. With chicken, boil it till ALL the pink is gone.. something you would eat yourself.
With HB get the lowest percentage of fat, and boil it in water, then strain. I usually cook it till ALMOST all the pink is gone. But watch it, because boiled HB cooks in no time flat.
