You can put in a top knot when the hair is long enough. I started putting Mia in a top knot when her hair was pretty short to get her used to it. I have not used the product, but there is top knot gel. It is mentioned in several threads...not sure which right now.
As for what to tell the groomer...when I took Brody the first time, not knowing what look to ask for, I made certain she understood I was going to grow his coat out. I'd suggest making sure any groomer knows that little detail, and make sure the groomer knows you want the top knot left alone.
Mine only get a "mini-trim" which she offers by that name, but it includes faces, ears, paws, sanitary, nails, and anals...she doesn't touch the body.
Your baby's hair will continue to change and will become obvious eventually as to silky/cottony and you'll probably have to wait a while to see his final colors. Mine are 2, and still changing.
