She is a cutie!!! I don't know the answer to all of your questions but I can help by giving you a comparison..
Max is a month older than cocoa and we had to have him groomed (i.e. shaved!!!) at 4 months b/c of matting. See album. His hair is more wooly or cotten like on his body and a bit silkier on his head. The hair on his head has changed completely to silver/ white with blond highlights and is still changing every day it seems.
I don't have any suggestions on grooming except to bring a picture of a cut you like. Also, I don't think it is too early for a top knot if you use bands that wont break the hair. I think there is "yorkie" product you can use to hold the brow bangs out of the eyes.
Cocoa is such a beauty! I can't wait to see her in a few months to see if her hair changed.
